Letting the Server manage your domain vs. Managing the Domain Yourself

I am trying to get my first SBS 2011 network working.  I have it installed as a VM on Hyper-V Server and eveything went very well.  As I am going through the "Getting Started" tasks I need to setup my Internet address.  I don't want to host my own website and SBS 2011 only gives me a few choices for hosting.  GoDaddy and eNomCentral.  It also suggests that I let the Server manage the domain and not to do it myself.  Now this may be a stupid question, but if I let the server manage the domain, can I host and manage Exchange and email myself?  Is that the same for remote management and Web Outlook?  I have done A record changes and also MX, SPF and autodiscover_tcp all pointing to the external IP address of my router.  So I don't want to host my website but I do want to host everything else.  Any feeback would be appreciated.
