IP Address Range Planning & Changing SBS IP

Hello, our company is currently using Windows 2008 SBS Server with Exchange & DHCP. It is currently setup to use the range 192.168.100.x for its hosts on the network. The problem is, now we are expanding at a crazy rate and will probably need more than 254 hosts connected. What would be a good range to move to that would allow more hosts to be connected. I hear many people say move to the 10.10.0.x range, but i an not sure how to assign the ranges based on this type.

Also is it a simple process of changing the IP address on a domain controller without all the services failing etc.

I think we may also need to change the SBS Server to the full Server edition, is it true the SBS server can only support a limited number of hosts?
