Restore a later Exchange Backup on SBS

Hi There

The OS part of the SBS 2008 has a problem which I can not fix and it is in the last backup.
It is not in last weeks.

So I can do a complete restore of last weeks SBS 2008 as a Baremetal, user data has not changed at all.
BUT, I do need the latest SharePoint and the latest Exchange but as these do not appear in the backup set list I can't restore them.

So how do I import the backup set list or just manually scan for a backup to restore?
