SBS 2011 backup jobs query

Hi,

Anyone tell me where I can find USEFUL (detailed - non jargon) information on the SBS 2011 backups?

I'd like to know, for example, if I screw up a file, how to look for previously backed up versions in a backup job. I cannot see anything in the help sections. I know this is a fairly simple question but finding the info has not been simple.
