SBS 2011 Upgrade Fom SBS 2003

I recently installed a new SBS 2011 Std. to replace an SBS 2003. I removed all the client computers from the old domain, shut down the old server, then joined them to the new domain (same name). I manually recreated all the user accounts etc.  I exported the Outlook data from the old server and imported it to the new server through client instances of Outlook. New mail flows fine and old mail is restored to the appropriate folder as expected. The problem is that if a user responds to an old email from someone else on the domain it doesn't get delivered. The sender gets a non delivery message. When one clicks reply on an old message the addressee field is populated with active directory information rather than an email address. If the sender deletes the AD information and types an address it works fine. The users would like to avoid the inconvenience of entering the address when replying. Is there a solution to this?
