SBS 2011 goes offline after OWA session - Sometimes

OK I have a very very odd situation. I have a client with a relatively net Dell T310 running SBS 2011. It's a pretty vanilla environment, no tweaking and very straight up install.

All services are normal most of the time. However, when my client is out of the country, specifically Aruba and opens Outlook on his laptop, most of the time everything is fine. Once in a while, maybe once or twice a week, him using Outlook in this manner causes the server to enter some kind of state that I can't describe. I've never been on site when this happens but what I'm told is the fans are running like the server is on, the blue light is blinking slowly and the monitor is black. Nothing brings it back to life and it's off the network. We're using Outlook 2010 BTW

I've look at the event logs time and time again but there are no anomalies leading up to the crash. Everything is normal then you see the network go into a disconnected state, then Exchange starts yelling because the network interface is gone then it stops.

You press the power button to restart the server and everything comes back up like nothing happened. Now he may be able to connect for a week without an issue or maybe only a day. It's extremely random.

The server has Broadcom NICs onboard which I disable today and replaced with an Intel PT server adapter, same thing happened this evening, which as the catalyst for me posting this now.

Does anyone have any clue what could be going on here? As some additional information, before we related the problem to him being out of the country, Dell replaced everything in the server at least twice, some components were replaced three times.
