SBS 2008 - Extreme Instability after failed update

I performed our scheduled maintenance and installed a singe security update on our SBS 2008 machine, I then proceeded to reboot as prompted.

On startup the server got stuck on the infamous "Step 3 of 3 0%" clusterfuck. All the services on the server started and everything was externally accesible basically, so I proceed to attempt to rename the pending.xml which was impossible via network access (even with ownership and full access to everyone) so deleted the file.

I then forcibly rebooted the server after attempting a remote reboot (shutdown /m\\servername /r /t 0) and leaving 10 mins with no change.

On startup it returned to the same Step 3 of 3 BS. I then proceeded to call MS and after almost 30 mins of being on hold someone answered, at that exact time the server magically proceeded to the login screen...

After booting though the couple of days following the server has been unstable. Explorer constantly locks up, services continue to fail or get stuck starting/stopping etc. There's no corresponding errors in the Application or System event logs.

Attempting to run an sfc /scannow does nothing. I run from an elevated prompt and get nothing, it just gives a cursor for an indefinite amount of time when running the command, no error, no status, nothing.

Where do I go from here getting this running properly again?

As of right now the TS Service is stuck on stopping after attempting to restart it to fix RDP access which stopped working and the only logged in console session I have has explorer 100% locked up on - won't accept ctrl alt del or anything to fix this. All services such as Exchange, File Sharing, Sharepoint are running though and I can't reboot at this time.
