Windows SBS 2011 Exchange Server not sending or receiving Emails with transport service started and suspected Virus

I have a problem where I have a number of SBS 2011 Servers deployed, different locations and different ISP connections that are not sending or receiving Email.  I have worked with a Microsoft Systems Engineer on the problem who has got us a workaround when the problem occurs.  What is happening is that an Infected file is coming into the Exchange server and by checking the Exchange log file it reports it.  At the point of arrival into Exchange Email stops inbound and outbound traffic but the services still report as running. If you go to the Exchange management console you will see an entry that says [INFECTED] with no entries after that. With advanced logging turned on we were unable to capture any details of the Infection so that we can send it off to the Antivirus support desk for interrogation.  It is not logged in the Antivirus logs or captured in the Antivirus vault.  It comes from different IP addresses and with different sender and title details each time I block the sender in Exchange. Has anyone else experienced this issue and have you been able to resolve it?
